Portuguese Queijadas de Leite Recipe
When I was little, I always loved watching my Vavo (Portuguese for grandmother) make Portuguese traditional baked goods like Queijadas de Leite. She would spend all day devoted to making dozens upon dozens of these custard-like egg and milk cupcakes. They were just so darn good and very hard to resist then, and especially now!
Flash forward twenty-something odd years, and my Vavo has passed, but I still have a hankering for Portuguese Queijadas de Leite or egg and milk cupcakes. I typically buy them whenever I visit our local bakeries (we live in little Portugal), but I wanted to start making them at home.
So that is exactly what I did! With the help of my aunt, and some dusty, flour, and grease splattered hand written recipe cards I now have a recipe for Portuguese Queijadas de Leite that is straight from my grandmother. I admit, I was a little overwhelmed at the thought of making them since they are much more involved than say regular cupcakes. However, they turned out delicious, and very moist and quite addicting.
Ingredients & supplies to make Portuguese Queijadas de Leite:
- 24 count muffin Tin & Papers
- Pastry Brush
- Spray Butter or melted butter 2 tablespoons + 4 tablespoons
- white sugar- 2 cups
- White flour- 1 cup + 1 tablespoon
- Eggs-large-3
- almost boiled milk- 3 cups
- grated lemon- 1 tablespoon
Directions:
Pre-heat oven to 350
Line cupcake pan with lightly buttered liners
Bring your milk to almost a boil, remove from heat before scalding
In a stand mixer, cream the melted butter sugar, eggs, and lemon
Slowly add in the flour and milk, mix on medium speed for 2-3 minutes
Pour into cupcake tins about 1/2 way to 3/4 way
Bake for 45 mins. Center will be sunken and a little wiggly.

>>>>I think a great tip that I personally will be doing next time is to perhaps skip the cupcake wrappers, and just butter the inside muffin tins REALLY well. If you do use the papers, it is essential to spray or coat them with butter really well. After the butter, add a little sprinkle of flour too! You want the paper to come off very easily.

- 1 tbsp grated lemon
Instructions

Hi, how much butter actually goes into the recipe? And is it supposed to be melted butter? It’s not clear.
