Pretzel Bites with Cinnamon & Sugar are a dessert made with pizza dough, and are flash boiled, and baked. They are then brushed with butter and rolled with cinnamon and sugar. Served with homemade icing, they are a delicious sweet treat.
I don’t know about you, but whenever I pass the pretzel kiosks at the mall my mouth waters. The heavenly scents of butter, cinnamon, and sugar waft through the air, and I am automatically sucked in to buy a cup of cinnamon & Sugar pretzels.
Then, I get stuck having to buy the extra icing cup because who doesn’t want to dip their warm, sugary bites into a sticky, white pool of awesomeness?
Honestly, the thought to make Pretzel Bites with Cinnamon & Sugar at home never crossed my mind. I might have even thought pretzels were fried up until last month–oops!
It was only until my younger two children participated in summer cooking camp that I realized that pretzels were not fried.
My kids brought home the cook book of treats they made each day in camp and I was begged to recreate the Pretzel Bites recipe. Although the recipe was for traditional pretzel bites, I made them my own with the cinnamon, sugar, and icing.
Pretzel Bites Ingredients
Making pretzel bites at home takes a little bit of a time commitment, but the use of canned pizza dough really helps make the recipe a bit fool-proof. You know I love my crescent dough recipes like these Cream Cheese Danish, but I have never really dabbled much with canned pizza dough.
- 1 can of pizza dough- I used Pillsbury thin crust pizza dough and cut it into two strips.
- 1/2 cup baking soda
- 1 egg, beaten
- water
- butter
- cinnamon
- sugar
Pretzel Bites Icing Recipe
- 1 cup confectioners sugar
- 1 tablespoon of water – add in teaspoon increments if too thick.
How to Make Pretzel Bites with Pizza Dough
Start out by heating 3 quarts of water with the 1/2 cup of baking until boiling.
Unwrap pizza dough and stretch the dough out into two long strips.
Cut out nuggets size chunks of dough.
Add half the dough to the boiling water, and boil for 30 seconds.
Once first batch is done, remove using a slotted spoon and place them on a paper towel; repeat until all dough is flash boiled.
Dip each chunk into the egg wash and place them on a parchment-lined baking sheet.
Bake at 425 degrees fahrenheit for 14-15 minutes.
Whisk cinnamon and sugar together in a medium bowl.
Once bites are done in the oven, brush each warm piece of dough with butter, and coat with cinnamon and sugar.
To make icing, whisk ( with a fork) the powdered sugar and water. If it is to thin add a tablespoon more of sugar, and if it is too thick and a teaspoon more water.
Place them in a bowl and serve warm with icing.

Hi, I always feel like all fresh pretzels kind of have this taste. You can reduce the baking soda by 50% which I have done and they still come out good, or try to scoop them up using a large slotted spoon faster. The long they sit, the more prevalent the taste will be.
