Ingredients for Sheet Pan Chicken Parmesan & Cheesy Zucchini
Rather than add extra carbs into our chicken meal, I decided that serving some fresh zucchini would be an excellent idea.
My family loves cheesy, baked zucchini so a few sprinkles of reserved McCormick® One Chicken Parmesan Sheet Pan flavor seasoning and some cheese made for a mighty tasty vegetable side.
- One package of McCormick® ONE Sheet Pan Chicken Parmesan (reserve 1 tsp)
- 6 thinly sliced chicken breasts (from two jumbo breasts)
- 2 tablespoons of E.V.O.O
- 2 cups of coined zucchini
- 1/2 cup marinara sauce
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
How to Make Sheet Pan Chicken Parmesan & Cheesy Zucchini
Line a large baking tray with parchment paper. You want to use a full size sheet pan for this meal.
Add sliced chicken breasts to a large bowl. Mine were wet and had their own juices so I opted to not use additional oil as a binder.
Add the Chicken Parmesan Sheet Pan seasoning to a shallow dish and coat each piece of chicken in it. This seasoning surprisingly goes a long way!
Add each piece of seasoned chicken to your baking sheet.
Place sheet in the oven for 20 minutes on 350.
While the chicken is cooking, add the oil, and 1 tsp of reserved seasoning to the zucchini and mix; set aside.
Once the 20-minute cooking mark approaches, carefully remove chicken from the oven.
Top each piece with equal marinara and a sprinkle of both cheeses. You will have extra cheese leftover for the zucchini.
Add seasoned zucchini coins to the same sheet pan the chicken is on. Make sure they each have space to cook. Top zucchini with cheese and bake for an additional 10 minutes.
Remove meal from oven, and enjoy warm with some crusty bread or a salad.
