Happy February! It seems like the winter is flaying by around here , but that is ok. I am admittedly ready for the spring and all the fun the warmer weather brings.
One of my family’s favorite foods to enjoy for not just an appetizer, but also a meal happens to be nachos. It might sound funny, but nachos are our way of enjoying all the goodness a taco has in an easier to eat and serve format.
But, since these nachos are for dinner, we had to make sure they were super filling and flavorful because this family loves some spicy goodness!
We picked up everything we needed at our local Walmart for the best prices possible!

Ingredients
- 8 ounces of raw shrimp
- spices (see recipe card for details)
- olive oil
- 12 ounces corn tortilla chips
- 24 ounces Pace Chunky, Salsa Medium
- 1 1/2 cups Mexican Blend Shredded Cheese
- 3 tbsps. chopped cilantro
- 15 ounces black beans rinsed, and drained
- 1 tomato seeded, diced
- 1/4 cup red onion diced
- 1 avocado diced
- 4 ounces black olives
More Dinner Nacho Toppings
- Greek yogurt
- Sour cream
- Green onion
- Pace Picante Sauce – Medium
- Nacho cheese sauce
- lettuce
Pace Chunky Salsa
If you are looking for a jarred salsa option that is not watery or lackluster in flavor, Pace Chunky Salsa in Medium is perfect. It contains just the right amount of heat that bold but still family friendly. You can find it at Walmart in hot, medium, and mild.

Nachos for Dinner
Our family has done taco nights in the past, but nachos nights are just more fun. One large skillet of nachos feeds us all comfortably thanks to the filling fiber of the beans, salsa, and the extra veggies and fresh toppings like avocado. Of course, you can customize these nachos to what your family might enjoy, but shrimp + Pace salsa is a match made in foodie heaven! The flavor combos were so good!

Hearty Shrimp Skillet Nachos
Equipment
- Cast Iron Skillet
Ingredients
Shrimp
- 8 ounces Raw shrimp
- 1/8 tsp black pepper
- 1/8 tsp taco seasoning
- 1 tbsp olive oil
Nachos
- 12 ounces corn tortilla chips
- 24 ounces Pace Chunky Salsa Medium
- 1 1/2 cups Mexican Blend Shredded Cheese
- 3 tbsps chopped cilantro
- 15 ounces black beans rinsed, and drained
- 1 tomato seeded, diced
- 1/4 cup red onion diced
- 1 avocado diced
- 4 ounces black olives
Optional Add-ons
- Greek Yogurt
- Sour Cream
- Green Onion
- Pace Picante Sauce – Medium
Instructions
- De-vein, and peel shrimp.
- Add oil, spices, and shrimp to a small skillet and cook for about 3 minutes over medium heat turning the shrimp once. Shrimp cook quickly and will be pink when cooked throughout.
- Once shrimp are done, remove them from the heat and set them aside.
- Preheat your oven to 350 degrees Fahrenheit.
- Chop & prepare all your veggies.
- Add all your chips to your cast iron skillet. I used a 12" double handled variety.
- Add cheese and try to cover the chips underneath as well as on top.
- Add drained and rinsed beans.
- Add Salsa, and chopped onion & tomato.
- Add 1 tbsp of cilantro, olives, and shrimp.
- Bake for 10 minutes.
- Top with remaining cilantro, and fresh avocado.
- For additional flavor, add sour cream/Greek yogurt and Pace Picante Sauce – Medium to each portion. Enjoy!
