Potato salad is one of them recipes that everyone has a unique spin on. Some of us like our potato salad with eggs, some with fresh herbs, and others with just mayo. I am all about fresh flavors so today’s recipe is one of my many versions of this summer side dish.
When I was at the market, I couldn’t help but notice the little sack of brightly colored fingerling potatoes for sale. Sure, these little oddly shaped potatoes were much more pricier than their standard counterparts, but I was intrigued. I remember eating a delicious fingerling potato salad when I went to Minnesota a few years back.
It all started when I was brainstorming a yummy side dish that has a unique twist for my Classic New England Clam Strip Rolls. I knew I wanted a potato salad that would be slightly different than most so I decided that purple, red, and yellow fingerling potatoes would be perfect.
Paired with some fresh dill, sweet, white onion, vinegar, lemon juice, and some spices and I had the tastiest batch of potato salad I have enjoyed in a while.
It really went well with my clam strip roll, and I am sure it will go great with a hot dog or burger this summer.
For this recipe, I did not go too heavy on the mayonnaise because I wanted the spices, and dill flavor to really give this salad a burst of flavor.

Best Ever Dill Fingerling Potato Salad Recipe
Ingredients
- 2 lbs fingerling potatoes scrubbed, chopped into chunks
- kosher salt, black pepper, onion powder, garlic powder
- 1 small white onion food process until fine
- 1/4 cup fresh dill washed, dried, only use ends (not stems)
- 2 tablespoons apple cider vinegar
- 2 tbsps lemon juice
- 3/4 cup mayonnaise
Instructions
- In a medium stock pot, cover potatoes with water, a pinch of kosher salt, and boil for 25 mins or until fork tender.
- Drain potatoes and allow them to cool for at least 15 minutes in a separate bowl.
- Once cooled, and not steaming, add in spices, dill, onion, vinegar, lemon juice, and mayo.
- Mix thoroughly, and allow salad to chill for at least 1 hour before serving.

Looks like a different way to prepare potato salad, but still sounds delicious to me! I haven’t tried adding apple cider vinegar to potato salad (ours is always the creamy kind), but I sure would love to try your recipe!

This is the kind of potato salad I love to make. I’ve never been a fan of ultra creamy potato salads. They’re just too rich for me. I much prefer a lighter version like this.
