These Chocolate Chip Banana Bars are pretty easy to make and require only common baking staples. They also bake up nicely in a standard sized jelly roll pan. If you are not sure what a jelly roll pan is, I will clarify!
What is a Jelly Roll Pan?
A jelly roll pan is not shaped like a log or jelly roll despite its fun name. The name jelly roll came from the fact that this pan is used to make the thin cake layers that make up jelly rolls.
It is a wide, flat pan that is pretty much like a cookie sheet except for the fact that it has sides. I used a greased 10.5 x 15.5 inch sized jelly roll pan for this recipe. However, if you do not own a jelly roll pan, you could use a 9 x 13 Pyrex baking dish. However, this would likely increase the cooking time.
Banana Bars Ingredients
- 5 normal-sized ripe bananas, peeled & mashed
- 3/4 cup light brown sugar
- 1/4 cup vegetable oil
- 1/4 cup whole milk
- 2 large eggs
- 1 3/4 cup unbleached flour
- 1 tsp baking soda
- 1/2 tsp. kosher salt
- 1 tsp. cinnamon
- 1 cup of semi-sweet chocolate chips (can use peanut butter chips if you prefer)
How to Make Chocolate Chip Banana Bars
Using a banana masher, mash your bananas in a large bowl.
In the same bowl, add your eggs, milk, oil, and sugar.
Combine well with a wooden spoon.
Add in the salt, baking soda, and flour and combine well with a spoon.
Fold in the chocolate chips into the batter.
Grease a 10.5 x 15.5 inch sized jelly roll pan and pour in batter.
Bake for 22 minutes. Edges will be golden brown. Use a toothpick to test the center of the bars to determine if they are fully baked. It should come out clean when inserted.
Freezing Instructions
Allow bars to fully cool. Place entire baking sheet in the freezer for 2 hours. Once bars are solid, cut them into squares using a knife. Store in an airtight bag for up to 1 month.
To heat, place bar in the microwave until warm.
