How to Grill The Best Bell Peppers
Now that grilling season is finally here, I am so excited to share some amazing; yet simple recipes with you all! From meats to veggies, and even fruits-grilling can bring out the best flavors in a variety of foods. One of my little cooking/savings tips is that I like to buy reduced produced like rainbow colored bell peppers at my local market and grill them within 24 hours.
Peppers, zucchini, onions, and even eggplant all taste fabulous with a traditional spiced olive oil marinade. There is just something so awesome about the open flames, and they way they make vegetables taste! I could eat grilled veggies pretty much everyday of the week because they are that tasty! Whether they be cooked on my charcoal grill or my gas grill; either way works well!
Bell peppers, also known as rainbow peppers are the perfect grilling vegetable. They have just the right amount of sweetness that gets caramelized when you grill them. I prefer to grill my veggies in a grill pan because it keeps all the veggies intact, but allows for the flames to touch them. You could makes these halved and right on the grill grates, but if you have a grill pan, I’d opt to use that.
I also find allowing the flavors of the simple; yet effective spices and olive oil to marinade help the flavors soak in. Enjoy these rainbow peppers as a meal or as a side to a grilled protein like chicken or fish.
Ingredients:
- Rainbow Peppers (bell)- 4 large
- Olive Oil- 3 tablespoons
- coarse sea salt- 1/2 tsp
- pepper- 1/4 tsp
- onion & garlic powder- 1/4 tsp each
Directions on How to Grill Rainbow Peppers:
Wash and dry each pepper
Core Pepper using a knife, and remove inner seeds and stem
Slice peppers into 1/2 inch thick rings
Add oil, and spices to a large bowl and whisk well.
Place pepper rings into the bowl and make sure they are all evenly coated with oil and spices
All them to marinate for at least 30 minutes
Pre-heat your outdoor grill to 400 degree
Lightly spray a grill pan with cooking spray.
Place peppers rings into the grill pan and grill them for around 7-8 minutes. Make sure you occasionally turn them to evenly grill all peppers. This will prevent them from burning! Burnt peppers=no bueno!
Serve with some delicious BBQ ribs, or chicken wings.
These are naturally gluten free, and low carb.
