Tacos are a meal that my kids cannot get enough of. They love everything about the crispy, crunchy shells, seasoned beef, and fresh toppings. I love that they are super versatile and can be mixed up with different proteins, sauces, and additions. Whether they are crunchy or soft we don’t discriminate around here.

Making Taco Soup on the Stovetop
This soup is not difficult to make. In fact, it is almost a one-pot recipe. However, I prefer to cook the ground beef in a smaller skillet to have more control over draining excess grease. You do not ever want a greasy soup and that can happen if the excess fat is left in the soup pot.
- Season, and brown ground beef in a skillet over medium heat. Drain any excess fat.
- In a 5-quart Dutch oven, bring water to a boil. Once boiling, reduce to a simmer, and add 8 teaspoons of Orrington Farms Beef Flavored Broth Base with Other Natural Flavor; stir until dissolved. If using beef broth, use one 32-ounce container as the juices from the tomatoes, corn, and beans add liquid to the soup.
- Increase heat, and add ground beef, taco seasoning, beans, corn, and all tomato products.
- Bring mixture to a boil, and then reduce to a simmer for 20 minutes.
- Serve with tortilla strips, sour cream, cheese, cilantro, and a lime wedge
Taco Soup Variations
- Ground Beef: Use lean ground beef for a healthier option, or substitute with ground turkey, chicken, or sausage for a different flavor profile.
- Triple the Beans: This recipe uses black beans, but feel free to experiment with other varieties like kidney, or pinto beans.
- Corn: Use frozen, canned, or fresh corn, depending on what’s in season or on hand.
- Cheese: While not included in the recipe itself, serving the soup with shredded cheese on the side adds another layer of heartiness and lets everyone customize their bowl.
- Broth: We love Orrington Farms Beef Flavored Broth Base but you can use a vegetable, or chicken broth base depending on your preferences. You will need one 32-ounce carton of broth.
- Spiciness: You can add additional canned green chilies to this to increase the heat, or you can top with fresh peppers.
Storing Taco Soup
To store leftovers, allow soup to fully cool and place the covered pan in the refrigerator. If the leftovers amounts are on the smaller side, transfer to a locking lid glass container. The tomatoes will stain plastic storage containers so glass is the best choice. This soup will last for up to 5 days if stored properly. To reheat, microwave leftovers, or heat on the stovetop until warmed throughout.
If freezing, allow the taco soup to cool. Transfer soup to a freezer-safe storage container and freeze for up to 3 months. To eat, thaw soup in the refrigerator until no longer frozen. Heat the soup on the stovetop until warmed throughout.

- ½ teaspoon garlic powder
- ½ teaspoon onion powder
